Tofu with an audible crunch, what could be better?
Working with my mother-in-law has a lot of perks, one of which is always getting new food to try. Mama Kate brought in some eggplant caprese stacks and immediately after trying it I asked for the recipe.
I was looking for a creamy sauce to mimic alfredo that I could eat with a spoon (I mean pour over real food), after some experimenting here’s what happened.

Something to make lunches out of, the toppings are the best part. Fresh red onion, arugula, vegan mayo with sriracha… Side note, vegan mayo is ridiculously easy to make. Seriously, just whip some soy milk oil and vinegar together.
